Scandanavian Drops Grandma Petersen (Lil)
1/2 cup butter 1/3 cup brown sugar
1 egg separated 1 cup flour
3/4 cup chopped nuts Tart jelly
Cream butter, add sugar,
egg yolk, beating until light. Blend in
flour and roll dough into small balls about one inch in diameter. Slightly beat egg white with a fork. Dip cookies in egg white. Roll in chopped nuts and place on to greased
cookie sheet, making a depression in the centers. Bake at 300 degrees about 15 minutes. Remove from oven and press down centers again and continue baking
for 30 to 35 minutes. Cool slightly and
fill center with red or green jelly.
This recipe makes about 2 dozen cookies.
P.S. Rather than jelly, you can use 3/4 cup semisweet chocolate chips melted with 1 Tablespoon butter.
