Snickers Cookies Jan Peterson
2 ½ cups flour 1 tsp. baking soda
1 cup brown sugar 1 cup butter
2 tsp. vanilla 3/4 cup cocoa
1 cup sugar 2 eggs
1 cup chopped nuts
Heat oven to 375
degrees. Combine flour, cocoa and
baking soda. Mix well. In large bowl beat 1 cup sugar with brown
sugar and butter until light and fluffy.
Add vanilla and eggs and beat well.
Add flour mixture and blend.
Stir in ½ cup of nuts. For each
cookie, shape about 1 heaping Tablespoon of dough around 1 bite size snickers
candy (I used small bars and cut into 4 pcs.) covering completely. In small bowl, combine remaining nuts,
ground up pretty fine, with 1 Tbsp. sugar.
Press 1 side of each ball into the nut mixture and place, nut side up,
two inches apart on ungreased cookie sheet.
Bake at 375 for 7 to 10 minutes until set and slightly cracked. Cool 2 minutes and remove from cookie
sheets. Cool completely. These are very addicting--use caution. Note:
I used ½ cup crisco (butter flavor) in place of part of the butter
because I think it makes cookies a little more crispy.)
