Pot of Gold Chowder Aunt Bud Rowlands
2 Tablespoons butter 1/4 cup chopped
onion
1/4 cup celery 1
can (frozen) oyster stew
1/2 lb. frozen fish filets 1/2 lb. frozen
shrimp
1 package frozen french
fries 1 package frozen
succotash
salt and pepper 1
pt. milk scalded
6 slices bacon, fried crisp
and crumbled
1/2 cup shredded cheddar
cheese
1/2 cup parsley
Melt butter, saute onion
and celery. Add next five ingredients
and seasonings. Pour hot milk over
all. Cover and bake at 375 degrees 45 ‑
60 minutes, stirring twice.
Serve ‑ garnish with
bacon, cheese and parsley. 3 to 4
servings. Chowder may also be simmered
on top of range covered, over low heat for 30 minutes.
