Cheese Stuffed Zucchini Geri Paddock
2 medium zucchini 1/4
c. chopped onion
1 T. Butter 2/3
c. cooked rice
3/4 c. cottage cheese 1
beaten egg
1 T. sniped parsley
1/3 tsp. salt 1/8
t. crushed basil
2 slices sharp cheese cut
into 16 strips
Trim zucchini. Cook in small amount of boiling water for 6
minutes or until tender. Halve
lengthwise, scoop out center and dice.
Cook onion in butter until tender.
Stir in diced zucchini and cottage cheese - mix in rice, salt and basil. Lightly salt shells. Fill with cottage cheese mixture, place in
buttered baking dish - bake covered in 35 degree oven for 25 minutes. Place 4 cheese strips on each half. Bake uncovered 5 minutes just to melt
cheese.
