Zucchini Casserole Leone Kachian
˝ stick margarine 1
large onion chopped
3 zucchini
unpeeled and sliced 1 clove
garlic, minced
3 large fresh tomatoes. Sliced 1 ˝ cup Swiss cheese
1 cup Italian bread crumbs 1 tsp. Salt
1/8
tsp. Pepper 1 tsp. Crushed
basil
Melt margarine, add onion,
zucchini and garlic. Sauté until onion
is transparent - stirring occasionally.
Add 1 cup of the cheese and 3/4 cup of the bread crumbs and
tomatoes. Add salt, pepper and
basil. Put in 2 qt. casserole, top with
remaining diced cheese and bread crumbs.
Dot or spray with margarine.
Bake uncovered at 350 for 1 hour
