Zucchini Squash Sue Jahns
3 or 4 small zucchini (size
of cucumber) 1
Tbsp. each oil and butter
Salt, pepper and garlic to
taste 1 large onion
sliced
1 green pepper sliced 2 or 3 med. tomatoes cut
up
1 cup shredded Cheddar
cheese
Wash and cut off ends of
squash. Slice 1/4 inch thick and put in
skillet with oil and butter mixture.
Sprinkle with salt, pepper and garlic.
Fry on medium heat until partially tender. Add onions and green pepper and tomatoes. Continue cooking until tender. While this is cooking, grate cheese and add
to squash. Heat with cover on until cheese
is melted.
